The Southern Bluefin Tuna is an extremely powerful fish that is well suited to a long life endlessly swimming the open seas. A highly saught after catch, the Tuna is not only a great sportfish to catch, putting up a fantastic fight to the boat, but also its medium flavoured flesh and is regarded by both Japanese and Western chefs as the best raw fish to eat in the world.
Snapper are a schooling fish, they tend to travel in large groups of similar size and age and are extremely tough and able fighters. A highly edible fish and as with any fish, the juvenile snapper has a sweeter and tenderer flesh and is ideal for baking whole, where as the mature snapper is perfect for dissecting the meat sideways into steaks, for frying, barbequeing or baking.
The King George Whiting, distinguished by its unique pattern of spots, as well as its highly elongate shape, are often found in bays and protected waterways over sand and seagrass beds, also venturing out onto deep continental shelf reefs during adulthood. KGW are heavily targeted by recreational anglers who value the whiting for its sporting and eating qualities.
